Vegan Fine Dining

On September 7, Victor Jivhed to offer a tasting menu at the Shard Farm focusing on the intriguing flavors of the season's offerings in Sweden and a dining experience that makes you think about what vegan food can be.

In everyday Victor Jivhed copywriting, and other times, recipe developer, private chef and catering creator with a focus on vegan fine dining. Victor is also one of this year's finalists in Plantable Cooking Contest, the equivalent of the Championship in herbal cooking, and the first in Blekinge to get to the final.

Inspired by chefs Wiley Dufresne and René Redzepi, Victor focused on how vegetables can get new flavors, shapes and textures to make them the protagonists of a taste experience out of the ordinary, served to be an equal delight for the eyes as for the taste buds.

"It all started with finding creativity in the kitchen by the challenge to totally exclude animal raw materials, something we have taken for granted in the Swedish cuisine since ancient times and therefore seen vegan food as a compromise taste or poor substitute. My mission is to change the perception of the taste of vegetables and alternative proteins can provide, and to promote a more ethical and climate-friendly way to eat. "
